LATE...Late...late...

I woke up late this morning :( so my breakfast suffered!! I went to bed early. But once I turned off the alarm thinking I'll get up in a few mintues...I fell asleep for another hour WOW!! 

Gym tonight to make up for my breakfast - Whole Wheat Bagel & Cream Cheese...not bad but NOT protein either! 

Food for 1/4/12
Breakfast: 
Meatball & Broccoli Bake
Coffee - Half & Half & Splenda

Lunch:
Chicken - Leg & Thigh
Wing Sauce
Ranch

Dinner: 
Bacon 
Eggs
Cheese
Hot Sauce

Snack:
Whole Wheat Sandwich Thin
Peanut Butter
Sugar Free Raspberry Jelly

Exercise:
None

Feelings:  By the time I got home yesterday...my head was pounding.  My intention was to go to the gym, so I ate and took some Advil.  It didn't help so I cleaned house, did some laundry and rested.  My phone was acting crazy so that didn't help how I felt.

Happy New Year.

My blog is gonna take a slight turn.  This year is about change!  Serious changes...inside and out.  I am going to be posting my food, exercise journals and recipes for my low carb creations!!

Breakfast:
Bacon
Eggs
Cheese
Coffee - half & half & Splenda

Lunch:
Chicken - Breast & Wing
Wing Sauce - 2tbs
Ranch Dressing 1tbs

Dinner:
Salad- Lettuce, Cucumbers, Cherry Tomatoes, Red & Green Peppers & Onions
Jalapeno Ranch Dressing - 2tbs
Meatball & Broccoli Bake*

Snack:
Atkins Shake 

Exercise:
Treadmill - 35minutes - 2.4 miles
Elipitical - 10 minutes - 1 mile
Bike - 10 Minutes - 4 miles

Recipe for Meatball - Broccoli Bake
Italian Meatballs
Broccoli 
Pasta Sauce
Ricotta Cheese
1 Egg
2 cups Mozzarella Cheese
1/2 cup Parmesan Cheese
Red Pepper Flakes - to taste
Italian Seasoning

Pre-heat oven to 425. In a 9x13' casserole dish combine meatballs, & pasta sauce.  In a bowl combine the Ricotta Cheese, 1/2 cup of Parmesan Cheese, Egg, Red Pepper Flakes & Italian Seasoning.  Spread over the Meatballs & Broccoli.  Top with Mozzarella Cheese cover  and bake for 45 minute.  Remove cover and bake for an additional 10 minutes or until cheese turns a golden brown.
